Bihon Guisado

This is Bihon Guisado. Pancit Bihon Guisado or Bihon Guisado is a Filipino dish made with sauteed rice noodles, thinly sliced pork, chicken, shrimp, and assorted vegetables. All the ingredients are sauteed in garlic, onions, celery and soy and/or fish sauces together with a little broth. This makes for a hearty noodle entree that’s good for a whole meal alone if cooked in large quantities. Enjoy this recipe from all of us at Filipino Chow.

Ingredients

  • 8 ounce package of thin rice noodles
  • 1/2 pound of skinless, boneless chicken legs, shredded
  • 1/4 pound of pork tenderloin, cut into small pieces
  • 1/2 pound of pork liver, cut into small pieces
  • 1/2 medium-sized head of cabbage, shredded
  • 2 carrots, julienned
  • 1 handful of green beans, trimmed and chopped into 1 inch pieces
  • 1 celery stick, thinly sliced diagonally
  • 2 onions, chopped into 1 inch pieces
  • 2 pieces of green onions, finely chopped
  • 1/2 cup of soy sauce
  • fish sauce or salt to taste
  • freshly ground black pepper

Instructions

  1. Place the rice noodles in a large bowl then cover with lukewarm water.
  2. When the noodles have softened, cut them into 6 inch lengths.
  3. Drain the water from the noodles then set that aside.
  4. In a small pot boil the chicken until tender in slightly salted water.
  5. Remove the chicken when it is cooked through and reserve the stock.
  6. Let the chicken cool then shred the meat.
  7. In a large pan or wok heat a little cooking oil over medium-high heat.
  8. Saute the onions and garlic.
  9. Add the chicken, pork and liver then stir breifly.
  10. Next add the cabbage, carrots, celery, green beans and some of the reserved chicken stock.
  11. Season with the soy sauce and some black pepper.
  12. Recuce the heat to medium and simmer for a few minutes until carrots are cooked through.
  13. Place the noodles on top of the mixture and blend together until noodles absorb the broth.
  14. Add a little more of the chicken stock if necessary.
  15. Cover and allow to cook for about two minutes then remove it from the heat.
  16. Place on a serving platter and garnish with the green onions, calamansi or lemon wedges.

Bihon is often eaten with pandesal or steamed rice. It can also be prepared in a variety of ways. Such as with seafood, beef, bean sprouts or scrambled eggs and other vegetables.
