Chili Con Queso (Spicy Cheese Dip)

Chili Con Queso Spicy Cheese DipThis is Chili Con Queso (Spicy Cheese Dip). The cheese dip is always a big hit at every party. But this queso will really get people talking, especially if you add the extra ingredient from the tip further down below. It’s also great to make a batch of cheese dip to have around to add some cheesy goodness to the other dishes you make through the week. And it’s actually really easy to make if you use a double boiler or a crock pot. Enjoy this recipe from all of us at Filipino Chow.


  • 1 pound of montery jack or velveeta cheese
  • 1 medium-sized onion, finely chopped
  • 2 medium-sized tomato, finely chopped
  • 3-4 medium-sized, fresh jalapenos, finely chopped
  • few sprigs of fresh cilantro, finely chopped
  • 1 lemon or lime, juiced
  • 1 cup of milk
  • 16 ounces of sour cream
  • pinch of salt and pepper


  1. You will want to prepare this dip using a double boiler or a slow cooker (crock pot).
  2. If you are using a double boiler, set the heat to low. If you are using a slow cooker, set the heat to medium or high.
  3. Start by cutting the cheese into 1 inch square cubes.
  4. Add the cheese to the pot and put the lid on the pot. Check the cheese every 5-10 minutes.
  5. Once the cheese is halfway melted, add the onions, tomatoes, jalapenos, and cilantro to the pot.
  6. Stir to mix the vegetables in with the cheese then put the lid back on the pot.
  7. Let this continue to slowly cook for another 30-40 minutes minutes, while occasionally stirring.
  8. Once the cheese has melted to a smooth consistency, add the milk and sour cream to the pot.
  9. Stir the cheese for a minute or two until the milk and sour cream has completely blended with the cheese, then return the lid.
  10. Let this cook for another 10-15 minutes.
  11. Now slowly pour the lemon or lime juice into the cheese while quickly stirring.
  12. Continue to stir for a couple minutes to prevent the citric acid from curdling some of the cheese.
  13. Now return the lid and let it cook for another 10 minutes, while occasionally stirring.
  14. At this point the cheese dip is done. Turn the double broiler off or set the slow cooker to low.
  15. You can transfer some of the queso to serving bowls and get more as needed or just serve it directly from the pot.
  16. Typically you serve this dip with chips, but I have found that it goes great with a lot of things. Try it as a topping for baked potatoes, a dip for pizza, add some cheesiness to a soup, include it with the filling for enchiladas, or even as topping on omelletes.

If you want to kick this dip up a notch, try adding a half pound of seasoned ground beef or sausage that's been browned. Just be sure to strain the meat before you add it to the pot and add if after the cheese has completely melted. Your guests will be blown away.
