Ampalaya with Ground Turkey Stir-Fry

Ingredients
- 2 medium ampalaya (bitter melon), sliced and seeds removed
- 1 lb (450g) ground turkey
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 medium tomato, chopped (optional)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon fish sauce (or salt to taste)
- Salt and pepper to taste
- 2 tablespoons cooking oil
- Optional: chopped green onions for garnish
Instructions
- Prepare the Ampalaya: Slice the ampalaya lengthwise and scoop out the seeds. Slice into thin strips. To reduce bitterness, sprinkle the sliced ampalaya with a little salt and let sit for 10 minutes. Rinse thoroughly and drain.
- Cook the Ground Turkey: Heat 1 tablespoon of cooking oil in a large pan or wok over medium heat. Add minced garlic and chopped onion; sauté until fragrant. Add the ground turkey and cook until browned and cooked through, about 5-7 minutes. Add soy sauce, oyster sauce (if using), fish sauce, salt, and pepper. Mix well. Remove the cooked turkey from the pan and set aside.
- Cook the Ampalaya: In the same pan, add another tablespoon of oil if needed. Add the sliced ampalaya and stir-fry for about 3-5 minutes until slightly tender but still crisp. Add the chopped tomato if using, and cook for another 2 minutes.
- Combine: Return the cooked ground turkey to the pan with the ampalaya. Mix well and cook together for another 2-3 minutes to meld flavors. Taste and adjust seasoning as needed.
- Serve: Garnish with chopped green onions if desired. Serve hot with steamed rice.
