Humba

This is Humba. Humba is a dish similar to Pork Adobo. The only difference is the use of banana blossoms and black beans. Both dishes are good, especially when you are eating it with plenty of steamed rice. Enjoy this recipe from all of us at Filipino Chow.

Ingredients

  • 2 pounds of pork belly, cubed
  • 1/2 cup of dried banana blossoms
  • 2 tablespoons of salted black beans
  • 5 cloves of garlic, peeled then minced
  • 1 teaspoon of whole peppercorn
  • 2 cups of water
  • 1/3 cup of vinegar
  • 1/4 cup of brown sugar
  • 1/3 cup of soy sauce
  • freshly ground black pepper
  • cooking oil

Instructions

  1. Add the cooking oil to a pot over medium-high heat.
  2. Saute the garlic until it turns golden brown.
  3. Add the pork to the pot and let it cook until it is brown on all sides.
  4. Now add the water, vinegar, brown sugar, soy sauce and bay leaf to the pot then bring this to a boil.
  5. Let this simmer for an hour or until the pork is tender.
  6. Add more water if needed.
  7. Next add the salted black beans then let it simmer for 5 more minutes.
  8. Place the dried banana blossoms in the pot and simmer for about another 8 minutes.
  9. Transfer this to a serving bowl and serve with steamed rice. Enjoy!

You can also boil the pork before you saute it if you prefer. And you can replace the water with the broth created from boiling the pork.
